By the beginning of February 2026, we will update you on which specific market in Hackney we will be setting up from. As this event is our very third one in London (where our commercial kitchen is freshly booked), our food rating and market space availability will be confirmed around this date!

Chef Alain from Martinique

Chef Alain, born in 1970 in Le Vauclin (Martinique), left for mainland France for national service, assigned as a cook in the officers’ mess. Continuing his momentum, he worked in private and public companies, becoming sous chef and head chef for around fifteen years. At one point, he switched careers, becoming a machine operator on construction sites for Renault, Peugeot, Toyota, etc.
And, for various reasons, the idea of becoming an entrepreneur behind the stove kept coming back to him. So, after gaining experience at market stalls and obtaining a CFG in cooking, a certificate in business start-up and market research, he has now been running his own business for over five years. His business is based in the Rouen-Normandy region. With his food truck, set up at markets, he introduces people to the flavors of Caribbean cuisine in particular.

These dishes, based on chicken curry (Colombo), Creole pork blood sausage, smoked chicken, fried fish, accras, and more, are very popular with the general public. He prepares and sells takeaway dishes, delicious homemade local juices, and local pastries. He delivers these dishes in Normandy and the Paris region. He attends decentralized, private events (baptisms, birthdays, weddings, works council meetings, dinner parties, etc.). And he always welcomes us with a big smile and a friendly atmosphere, accompanied with good music, at the market on St. Mark’s Square, among other places.

Allergies information:

Please inform us of any food allergies when placing an order online. None of our dish contain nuts. Milk is included in the preparation of the boudins and our Greek yoghurt dressing. For those who do not consume any alcohol (for religious reason), Chef Alain uses white wine in the preparation of his Boucané chicken. The chicken once cooked barely contains trace of alcohol!
